Day 6

Breakfast
1 glass vegetable juice (freshly made)
1/2 beet
1/2 cucumber (peeled)
3 stalks celery
3 medium carrots
small handful spinach
Handful of soaked almonds

Lunch
Scrambled egg & fried potatoes
Rainbow salad
1/2 zucchini, diced
1 cucumber, sliced
2 tomatoes, diced
cauliflower florets
broccoli florets
Dressing: Apple Cider Vinegar, olive oil, flax seed oil, oregano, basil, dulse, kelp

Dinner
Salmon
Steamed butternut squash with red chili sauce
Steamed asparagus

Snack
Almond milk with stevia
Nuts

I used up the last two eggs yesterday and could not figure out what to have for breakfast. I have been wanting to make vegetable juice since Tuesday, so I decided to make some today. I looked on the internet and in a juice book and kind of combined a couple, as almost all of the recipes have fruit in them. I have to admit that I was kind of worried how the juice would taste, but it was really good. You can tell that I must have went to the grocery store because I had eggs for lunch. We did have eggs in the house, but I have learned to much about what is in the white eggs. How the chickens are put in cages that they barely fit in, can't move around at all, and are fed hormones to make them produce more eggs, and then are given antibiotics because they get bacteria from their living conditions. I really only try to eat brown eggs if I have to eat them. I would really prefer to have fresh multicolored eggs, but I don't have the time nor desire to raise chickens in my backyard.

The rainbow salad was so....s0.....s0 good. It is much like the tomato, cucumber, red onion stuff I got from Amanda and ate earlier on this week, and it was a nice change from lettuce salad. Not that I am tired of salads, just the dressing. I definitely need to a recipe I have somewhere for raw, vegan ranch dressing made from either sunflower seeds or cashews.

The hardest thing today was remembering to take all the pills that I need to take. Being busy on weekends makes it more challenging and I forgot to take them with me when I went miniature golfing with my grandkids. 6 days down, 12 more to go. I am 1/3 the way through.
