Thursdays I serve as a missionary at the BYU Family History Library so I have to take my lunch with me. Usually I take a frozen green smoothie (that one of my fellow missionaries call's pond scum) and by lunch time it is nice and creamy. Since I couldn't take that in, I had to get creative.
Breakfast
Sweet potato, cubed and fried in coconut oil
The last of the veggies in ACV
Lunch
Crudites (cut up veggies)
Hummus
Celery stuffed with fresh/raw peanut butter
Tomato juice (I blended my bottled tomatoes before I left)
Dinner
Red bean soup
Red beans soaked for 48 hours
Potato, carrot, onions, garlic, celery and herbs/spices
Snack
Celery stuffed with fresh/raw peanut butter
The one thing about eating only vegetables is that I get hungry sooner. The sweet potato didn't last long and I was hungry by 10:00am. I ate part of my lunch and saved the rest for later, figuring I would be hungry again, and I was around 2:30, so I ate the rest. I find that if I don't have protein or grains, then I have to eat sooner. There is nothing wrong with that, it is just something I have noticed.
